Ever pull a tray out of the oven only to find half the loaves are perfect and the other half are barely tanned? It’s frustrating. That’s usually because of “hot spots.” To fix that, we don’t just rely on the oven spinning; we use circular radiant heaters that wrap around the entire chamber. Instead of waiting for the air to get hot and hoping it moves around the bread, these infrared lamps send heat directly into the dough. It’s faster. Much faster.
Why the Circle Matters
If you use standard straight lamps, you end up with “stripes” of heat. Some spots get blasted, others get missed. We solved this by curving the quartz infrared tubes into a circle. As your rack spins, every single tray passes through the exact same amount of heat. Since the energy hits the surface of the product directly, you can actually cut down your bake times without sacrificing the crust.
The Nitty-Gritty on Materials
We use high-purity quartz glass for the tubes. Why? Because baking involves a lot of rapid heating and cooling. Cheap glass would just crack under that kind of stress. Depending on whether you’re running 220V or 380V, we tweak the length of the filament and how tightly it’s coiled. That’s how we make sure you get the exact wattage you need. Then there’s the choice between short-wave and medium-wave infrared. Short-wave is like a flash—it hits the surface instantly. Medium-wave sinks in a bit deeper. You have to find the right balance here. If you go too heavy on the short-wave, you’ll end up with a burnt crust and a raw center. Not a great look.
Keeping Things Running
When a lamp finally gives out, you don’t need a degree in engineering to fix it. These are drop-in replacements. We use standard connectors, so you can swap them out quickly and get back to baking. But here is a heads-up: these high-wattage arrays put off a ton of heat. If your oven’s ventilation isn’t up to the task, that heat has nowhere to go. It can fry your control relays or even warp the outer frame of the oven. Keep your airflow clear. It’ll save your equipment and keep your lamps from burning out too soon.
